Departure, Portland?s only rooftop open air restaurant, opening in April 2009, is beginning the search for its Executive Chef. The Modern Asian Restaurant and Lounge is an escape from the ordinary, a journey into sophisticated surroundings and innovative cuisine. GENERAL PURPOSE
Plan and manage the kitchen staff in the procurement, production, preparation and presentation of all food for the hotel in a safe, sanitary work environment which conforms to all standards and regulations and achieves profitable, competitive, quality products.
ESSENTIAL DUTIES/RESPONSIBILITIES
Position is responsible for long and short term planning and day-to-day operations of the kitchen and related areas. Recommends menu and procedural changes. Recommends the budget and manages food and labor costs within approved budget constraints. Performs all essential functions while adhering to all SOP&apos;s and future food programs to ensure a consistent, quality product.
Manage Human Resources in the kitchen in order to attract, retain and motivate the employees while providing a safe environment; hire, train, develop, empower, coach and counsel, conduct performance and salary reviews, resolve problems, provide open communication vehicles and discipline and terminate as appropriate.
Plan and manage the procurement, production, preparation and presentation of all food in the hotel in a safe, sanitary, cost effective manner.
Monitor and control the maintenance/sanitation of kitchen, equipment and related areas to ensure a healthy, safe work environment which meets/exceeds federal, state, corporate and franchise standards and regulations.
Develop, recommend, implement and manage the department&apos;s budget; continually analyze, forecast, monitor and control the labor and food costs through various methods to meet/exceed management/budget objectives.
Develop and implement menus and back-up (use records, production lists, pars, training, etc.) within corporate guidelines to continually improve revenues and profit margins while maintaining quality.
Execute and promote the Accident Prevention Program to minimize liabilities and related expenses.

OTHER DUTIES/RESPONSIBILITIES
Perform special projects and other responsibilities as assigned.Job RequirementsExperienced in fine dining pan Asian cuisine. Seeking professional, exceptional individuals with high volume fine dining experience and hotel experience.
Requires advanced knowledge of the principles and practices within the food profession. This includes experiential knowledge required for management of people and/or complex problems and food and beverage management.
Requires oral and written communication skills.
More than two years of post high school education, but less than a degree from a four year college.
Experience required by position is five to ten years of employment in a related position with this company or other organization(s).

The Sales Manager is a fully competent individual who has experience in the sales process and function. GENERAL PURPOSE
Meets and exceeds revenue goals by developing new accounts and growing current hotel accounts in a profitable and win-win selling approach.
ESSENTIAL DUTIES/RESPONSIBILITIES
Achieves a minimum of 90% of productivity goals and 100% of activity goals, as established by management.
Direct Sales: Targets results-oriented high revenue potential sales calls to ensure a successful direct sales program, in accordance with goals established by department budget and marketing plan. Must have own reliable transportation and possess a valid state drivers license in order to make sales calls.
Key Account Management: Maximizes current hotel key accounts by identifying and capturing those that offer revenue growth.
New Account Development: Captures competitor&apos;s accounts through networking, research and reader board surveys in order to target and solicit those most probable to generate new business.
Acquires referrals from existing accounts: Follows up on all leads within 48 hours of receipt in an effort to create new business for the hotel, and, when appropriate, sends leads to other Sage hotels.
Plans and implements an on-going Targeted Account Development \&quot;hit list\&quot; in order to create new revenue and acquire valuable hotel contacts, and contracts.
Continually targets and prospects for new business through telemarketing, individual creativity and innovation.
Yield Management: Utilizes yield management techniques by profitably negotiating room rates and function space commitments in order to enhance the hotel&apos;s financial performance.
Account Service and Management: Maintains well-documented, accurate, organized and up-to-date file management system in order to serve client and employer in the most expedient, organized and knowledgeable manner.
Develops strong customer relationships through frequent communication and the use of professional, courteous and ethical interpersonal interaction.
Develops customer profiles and maintains an effective trace system, including trace dates and references, in order to best meet client needs, resulting in superior account service and increased revenues.
Promptly follows-up on all customer needs and inquiries in an efficient and expedient manner.
Product Knowledge: Conducts research, surveys, personal investigation and studies market place and territory in order to effectively capitalize on the hotel&apos;s strengths and competitor&apos;s weaknesses and capabilities.
Time Management: Focuses on revenue-producing activity and maximizes selling time by dedicating a minimum 90% work time on direct sales efforts.
